Vrat wale aloo or vrat ke aloo recipe is a crumbled potato recipe for fasting without onion-garlic.

Vrat wale aloo is made during fasting or vrat. Without onion-garlic, the aloo or potato sabzi is simple easy and delicious recipe.

Potato curry can be made on any regular day not only for vrat or fasting. It goes well with pooris or chappatis any time. 

There are many different variations of preparing Aloo sabzi (potato curry) for fasting.

Ingredients for Vrat Wale Aloo Recipe | Vrat Ke Aloo Recipe, Aloo | Fasting Aloo Recipe:
  • 3 medium potatoes (aloo)
  • 3 medium tomatoes OR about 1 cup of chopped tomatoes
  • 1 or 2 green chilies, chopped (hari mirch)
  • ½ teaspoon ajwain (carom seeds) or cumin seeds (jeera)
  • 1.5 to 2 cups water
  • 2 tablespoon oil
  • rock salt or sendha namak as required


Rock salt as this is for fasting /vrat recipe, if you are making it normally then you can use normal salt instead of rock salt.

How to cook Vrat Wale Aloo Recipe | Vrat Ke Aloo Recipe, Aloo | Fasting Aloo Recipe:
  1. Take a pressure cooker add cleaned potatoes, add water and keep it for boiling.
  2. Sprinkle teaspoon of sendha namak.
  3. Boil the potatoes in the pressure cooker for 4-5 whistles, till the potatoes cook and are soften.
  4. Peel the skin and keep them aside.
  5. Take a pan and heat 2 tablespoons of oil in a pan
  6. Add 1/2 teaspoon of carom seeds and let it crackle
  7. Add the 1-2 chopped green chilies
  8. Saute for a minute.
  9. Add a cup of chopped tomatoes and saute.
  10. Stir and saute till the oil starts to leave the sides of the mixture.
  11. The tomatoes would have cooked by now and become soft.
  12. Continue to stir in between when cooking the tomatoes a couple of times.
  13. Crumble the 3 boiled potatoes in the tomato gravy. stir and mix well.
  14. 10 add 2 cups of water, stir well.
  15. Sprinkle Salt as required.
  16. Simmer till the gravy thickens a bit.
  17. Gravy will thicken more when it cools down.
  18. Look at the consistency of how thick you want the gravy and cut the flame.
  19. Garnish with coriander leaves and serve vrat wale aloo hot.
